o far, fruits and vegetables were not included among the dietary recommendations aimed at preventing osteoporosis. In a main reason but inevitable: their modest calcium.

Yet some vegetables like cabbage and parsley, spinach or salad contain large amounts of vitamin D. Which is essential to the metabolism of osteocalcin, a protein of bone involved in regulating its mineralization.

In addition our diet rich in animal protein and salt, exposes the bone to a demineralization. That is to say to a loss of calcium. Because of their high content of organic salts of potassium, fruits and vegetables can prevent this calcium leak.

While the contribution of plants to the provision of recommended intakes of calcium remains secondary compared to dairy products. But their impact on the regulation of calcium loss gives them a significant role in the nutritional care of osteoporosis. And besides, they have the advantage not to grow and not to make any body fat.
